Sweet Potatoes with coconut sauce Suitable for Vegans
   
Sweet Potatoes with coconut sauce

Ingredients

• 1 small onion
• 1 garlic clove
• 1 tsp turmeric
• 1 tsp coriander
• 1/2 tsp cumin
• 1/2 tsp cardamom
• 1 tsp dry or fresh chilly pepper
• 1 piece of fresh ginger
• 400ml coconut milk
• 400gr sweet potato
• olive oil
• fresh coriander leaves
• salt

Directions:

• Peel the potatoes, chop them and cook them in boiling water. Alternatively you can bake them in the oven and put them aside.

• Gently fry the onion with the chopped garlic, add all the spices and the coconut milk.

• Adjust with salt and cook for about 10 minutes.

• Add the potatoes, mix with the sauce and serve the soup with fresh coriander.
